Food Tray Sealing Processes

Atmospheric Heat Sealing

Atmospheric heat sealing closes the tray without intentionally removing or replacing the air inside the package.

It is commonly used for takeaway meals, deli foods, desserts, bakery products, fresh produce and products with short refrigerated or same-day distribution.

Gas-Flush Modified Atmosphere Packaging

A gas-flush MAP machine introduces food-grade gas into the tray headspace before sealing. The gas displaces part of the normal air but may not create the same residual-oxygen level as a vacuum-and-gas process.

Gas-flush MAP can be suitable for selected ready meals, bakery food, produce and chilled products where a controlled atmosphere is required.

Vacuum-and-Gas MAP Packaging

Vacuum-and-gas MAP first removes most of the air from the chamber and then introduces a controlled gas mixture before the tray is sealed.

This process can provide more controlled residual oxygen than simple gas displacement, but it requires a vacuum pump, gas-control system, suitable tray, high-barrier film and validated sealing process.

Vacuum Skin Packaging

Vacuum skin packaging uses a heated skin film that conforms closely around the food and bonds to a compatible tray or backing surface.

VSP helps immobilize the product, reduce free package volume and create a premium three-dimensional retail presentation.

It is commonly used for premium meat, fish, seafood, cheese and prepared protein products. VSP requires specialized film, tray design, heating and vacuum control.

Vacuum Tray Sealing

Vacuum tray sealing removes air before applying the lidding film. It should not automatically be treated as identical to vacuum skin packaging.

How a Food Tray Sealing Machine Works

  1. Tray loading: The empty tray is filled with the food product.

  2. Flange inspection: Food, oil, sauce and moisture are removed from the sealing flange where possible.
